Dispersed Phase and Emulsification Conditions on the Stability of Water-in-Oil Emulsion

W/o emulsions were prepared with rotor-stator homogenizer and refined olive oil used as continuous phase. Viscosity, separated oil % (v/v) and zeta potential were selected as responses of emulsion stability.
